All Kona Coffee Is Not Created Equal

All premium Hawaiian Kona coffees are costly compared to many coffees of the world. A price of $20 and up per pound is typical. All Kona coffee, however, is not premium. In part, the high cost of Kona coffee is because of its rareness. There is actually only enough Kona produced for every person in America to have one cup per year! Quality, not scarcity is the only reason you should pay more for this unique regional coffee. High quality Kona is achieved through attention to many factors, including the selective grading of green beans, skill in processing and roasting, and packaging to retain freshness.

TASTE! TASTE! TASTE!! You will find opportunities to sample a variety of Kona coffees. Be discerning and pay attention to what the brew does when it hits your taste buds. It should have a full and rich flavor with a full-bodied presence. Be aware if, instead, you experience a thin, bitter, tobacco or cardboard-like flavor, or an unpleasant aftertaste. These are signs of poor bean quality, unskilled roasting or processing, or lack of freshness.

Java On The Rock is 100% pure Kona, grown on our own and other farms in the Holualoa area of North Kona. We roast in small batches on the dark side for fuller flavor. Though we use the same beans and roast for both of our coffees, our different processes result in very distinctive qualities.

The Rock— the island of Hawaii. Over millions of years five volcanoes violently emerged from the ocean building this raw and primal place on Earth. Hawaii is an island in progress, ever changing at the whim of fiery volcanic forces—forces that destroy as well as create the land and its abundant life.

Kona coffee thrives on a narrow strip of land starting north of Kailua running 20 miles south along the coast between 500 and 2,000 feet above sea level. About 500 farms are tucked away on the slopes of the volcanoes Hualalai, in North Kona and Mauna Loa in South Kona. Most of these farms are under five acres. Coffee loves Kona’s rocky volcanic soil and climate. The sunny mornings give life, and the afternoon rains and cloud cover give moisture and protection. During the dry winters with cool nights the coffeee trees rest and sprout buds. The start of rainy season in February signals the buds to burst into snowy white flowers. The green fruit that follows ripens into fat red cherries that are ready to pick starting in August.

Since many of Kona’s farms are family-owned, the planting, pruning, fertilizing, weeding and picking are chores done lovingly by people who know every tree on their land.

Three Stone Coffee TM is a highly crafted and known for its depth of flavor, low acidity, and body. Our trade secret is the Three Stone TM process invented by Bruce that we use to treat our beans after roasting. One effect of this process is reduced acid which permits a stronger brew without bitterness. The result—a smooth, yet rich and complex coffee that dances on your taste buds. Like a fine wine, Three Stone TM derives its value from the painstaking attention we dedicate to processing each bean for a full and consistent flavor. A connoisseur’s delight!
